For it to work in VR at all you must select OpenVR for your Vive in the Video display settings drop down menu.
AC does not have VR menus but you can simply load up SteamVR, use the desktop mode and browse to AC in your games list, load AC and then go through the launcher menu and then load to a race.
Thats literally all you need do to get AC to run in VR but it will never start in VR when you try to run AC from your Steam library- just run it as normal, set up a race on your monitor, ensure OpenVR is selected and then just start the game- when the track loads, you will be in VR.
