when your car slow down when you do drift change gear on lower
when you ride on second gear don't change it on lower
( I don't remember if Assetto Corsa has Steering and Braking assist)

With donuts you can learn multiple easy ways to start the drift like using the handbrake, clutch kick or just the power as well as learning how to hold the drift, figure 8's will teach you how to transition, once you can do both of these well you can apply it to pretty much any corner on a track.
Also make sure traction control and stability control aren't being turned on by the game, I've had that happen a few times and it makes drifting impossible :P
On the other hand if you can drift in real life already and know how to drive i would say the physics on this game are the best you can get and the closest you are going to get to real life before ACC comes out ,if as mentioned ,you can drift then its just trial and error of having to learn the track , car and to understand the physics
