Otoh, I just made my heel kick the throttle, tilting my foot almost fully horizontally back with my G25 (only G27 and newer started to offer movable pedal-faces). Get your tool(s) out :D
then again, the game allows for you to manipulate each axis-signal with inidvidual dead-zones and saturation. I would suggest you look into that.
the modern technique is now more 'ball of foot, side of foot' basically you press the brake with half of the foot and sort of roll your foot across to 'blip' the throttle with the side of the foot.

and if you struggle cos of old injuries you could even go so far as to buy some 'driving foot wear' like sparco time 77. they have a thin sole so you can feel the pedals better plus extra padding at the side of the little toe to assist in reaching the throttle.

and il just quickly add that is was this game that i taught myself to heel n toe on (which i now do in real cars) so as a simulator for teaching technique assetto does the job. and if you were even slightly interested the cars i learn in first were the maserati 250F T2 12C and the bmw M3 E30 DTM cos of the long gears they just seemed easier to learn with.

To break things down in stages, the first thing you should practice is simply braking with only the left side of your foot. Once you feel like you have the same feel and control with only part of your foot as all of your foot you can try rotating your foot to blip the throttle. I personally think you practice this with cars that have ABS (I run ABS if the representive car has such a system as in real life it is indefeatable). There is no sense adding the extra burden of not locking the tires while you're trying to heel toe.
One tip, is that the only thing that really matters is that the car is in the proper gear prior to turn in. A slow lazy downshift while braking makes no difference compared to a fast one. What you actually want to concentrate on is not changing the brake pressure while you are blipping the throttle as that could upset the car. Another thing to consider is whether you want to go through every gear or not. You can shift through every gear blipping the entire way or you can go through every gear and only blip when you get to the gear you want. If you don't want to go through the gears you can just go the gear you want and skip gears, it makes no difference to the transmission. Personally I go through every gear so I know what gear I'm in. In game a money shift is annoying, in reality it's something else.
Anyway, keep practicing until you can perform the downshifts by muscle memory. One reason why cars with automated transmissions can be faster than those with a traditional manual is that the driver with the automated trans has less to think about and only has to concern him/herself with hitting their marks and not minutia of the car.
