This sounds like the steering assist that Forza had if I remember correctly. I can't seem to find it on Assetto and don't think it's a feature at all (and definitely not by default). You could try to set up a practice session, and under "summary" (red round button) click on assists, make them "pro" and see if that helps.
I really hope it's not just Force feedback, which makes the wheel turn back to center if you turn it either way. But that wouldn't prevent you from crashing at all :D
Install that in-game "app".
(you could alternatively get the LUT-generator tool as it is pretty much tuned for Logitech wheels, but I'd rather you explore & understand the topic in a more hands-on manner)
Next is setting your global wheel-driver settings to ~85% ffb-gain / "force". Because: reasons. Apply changes and Close any driver-dialogue before going into any game. Start games only after you had your wheel plugged in, auto-calibrated and AFTER you made the driver-adjustments above. If you have a driving-game running, exit it completely before applying driver-changes!
In Assetto Corsa Settings: make sure you have all artificial enhancements turned off, in-game global gain @100%. minimum_force: ~10%

Now for each car, chose the grippiest tyres and an unrealistically-grippy track, heating-blankets turned on, run the ffb-clip app and start thrashing that car for a good number of laps, 1..2 clean ones and then: start weaving about (stay on the paved surface, though! try to avoid the heavier curbs). Now when this is complete and ffb-clip has gathered some data: try and adjust the per-car gain-value as proposed by ffb-clip.
Now drive again, at race-speed and using your best line and feel the difference. Done.
From this point onwards: adjust values (& optional effects) to taste.
Different cars feel differently. They are supposed to do that. Even different tyres will -- obviously -- give different results as in heft of the steering-forces.
PS.:
I wrote this assuming you might be new to using a wheel with Assetto Corsa or new to using a ffb-wheel in general. If it is only the gameplay-related profile-settings in Assetto Corsa: make sure you have your driver-profile set to "Professional" or "Factory", whatever you prefer. Or turn off any default-aids alltogether, resulting in an indicated "custom" setting.

I think this aswell, it is probably the force feed back pulling the wheel around.
If you never drove a real car (or a car on a race track) and never tried sim racing before, then this will be strange to you for now. You'll get used to it, and try different cars.
For your wheel model, you may have to change something, found in the file assetto_corsa.ini in the folder C:\Program Files (x86)\Steam\steamapps\common\assettocorsa\system\cfg

FFB should be most noticable in that it tries to keep your front wheels inline with the direction of travel, otherwise known as self aligning torque. When you turn into a corner under normal circumstances it should feel like it wants to straighten up / recentre.
If your wheel is turning INTO the corner, your FFB is probably reversed.
*edit: just noticed Manwith Noname's post above, lol. But i do also think that's what you're experiencing, and you should fix that asap.
maybe offline you're in AI controlled mode as online that mode can't be enabled, there is no "auto" steering assist in this game
as far as assists go set it to factory and maybe start off with a little stability control
