Is tire wear grip fall off realistic?
for some reason each wear stage has a dramatic grip difference rather than gradual grip reduction. as soon as tire is yellow, it feels like a switch for 50% grip loss is turned on like a switch

There is some certain point on a tyre where the grip is almost gone. Depends on the corner, temperature etc. Not sure how accurate FM is with these parameters, but 50% is almost gone in any game/sim. For example take a look at F1 Games, where 50% is undriveable.
I'm glad you mentioned this because I was planning on doing some tire testing this weekend and I will add this to the list of things I want to figure out.

I want to figure out if there is optimal tire pressure and temp for each tire type. Like do soft tires work better at 185F compared to 200F. Are mediums the same or different numbers? That kinda stuff.

Race tires are often designed to have a cliff. Once a tire wears out so much performance falls off a cliff and it is truly stupid to stay out on those old tires. So, overall, I'd say they did a decent job of modeling that in the game.
0-59% is drivable.
60%+ is not.
multiplayer races they have accelerated the tyre wear, if you make your own race tyre wear is more realistic. sucks we can only do online custom lobbies with friends.
