TL;DR: do NOT adjust fuel/tires at the start of the race

I've been trying to find a workaround for this issue for a while now. I'm not sure I've found it, but it worked for me and some other folks reported success at the Forza forums, so I'm posting this here to get more people testing it. It might have been a fluke, your mileage might vary, etc.

First, how to quickly check if the bug happened without having to do full races: at any point in the game (including during a race), go to photo mode, take a picture and try to save it. If you end up at a screen asking where to save the picture, then your game is working fine (no need to actually save the photo). If, instead, you get stuck at a screen with a spinning wheel, not actually being able to save the photo, then your game is in a broken state and no career progress will be saved.

Now, as for my testing and results...

So, first I tested doing things the normal way - go in, skip practice, go to the main race, pick a position on the grid, adjust fuel, start race. Once in, I checked if photo mode was able to save a photo - it wasn’t, so race progress was not going to be saved and I quit the game. Did this two times with the same results.

On the third attempt, the only - ONLY - thing I did different was… I did not adjust fuel. Sometimes I skipped practice, sometimes I did full practice, sometimes I restarted races, applied upgrades, everything normally… I just made sure not to adjust fuel at the start of each race.

I kept testing with photo mode during races and trying to save a photo worked. After completing two full series - 10 races in total, upgrading cars every opportunity I got - I quit the game, loaded back in and all my progress had been saved.

This is NOT enough testing, but if anyone else wants to try it, give it a shot. Remember to pause at the start of the race and try to save a photo - if you find yourself unable to save it, with an endless spinning wheel, then it is still broken and progress won’t be saved.

I have been avoiding adjusting the fuel and/or tires before each race and have not gotten stuck in any loading screens since! I was getting so frustrated with losing my progress. This works - please share!

I never adjusted fuel/tires once and have done about 30 races and still stuck on 2nd race in career. My car is already level 50 from trying to get career to save. Im not willing to put more time into game until they fix issues.
I cant even try your suggestion since I was already never touching fuel/tire setup.
It wont even let me buy other cars just loads forever.

When I'm playing, keeping the task manager open on the services tab, I noticed that the XblGameSave service, which is responsible for saving progress, periodically shuts down itself about every 10 minutes. Now I have passed two races without changing the fuel level and stably turning on the service after the end of the race. Then, just in case, I upgraded the car so that I signed up for saving progress made in two races, but i did it through the main menu (not in the cup menu). Then exited the game and logged in again. As a result, my career progress was saved and I had to go through the third race already. But with such restrictions that you can't change the fuel level or tune the car, it's easier not to play at all. During the race, you may notice that the service has shut down if the experience stops dripping to the level of the car.
More often it happened that I could go through one race by changing the fuel level, then start the second race, the game let me into training, but after that when entering the race itself - endlessly loading, when I exiting the game via alt + f4 and entered the game again, then of course all progress was lost. As I understand it, if you try to do any action that affects saving, for example, buying a car or improving it or loading directly into the race, then when the service is turned off, the game will naturally go into endless loading. Turning on the service during the save progress will not bring results.

I also had this issue when playing the game abroad on a not exactly awesome internet connection. I got stuck on the 1st championship at Watkins Glen and just could not get passed it no matter what I did i.e. not changing fuel/tyres, exiting before the next race etc.

However, once home on a good stable connection I haven't had any issues since. I can edit performance whenever. Adjust fuel/tyres and it still saves!

So, at least for me, it is an internet issue somewhere - probably a connection timing out and no error handling for it in game.

I am getting the spinning wheel of 'screw you, do the race again' randomly on upgrades, on car purchases, on race starts, on switching between menus...

I can not change tires/fuel to heart's content, skipping or completing practice runs, what ever. This abhorrent 'game' screws me over whenever it pleases.

I am done with this crap, until Turn10 fixes this sad, sad status quo.

Now I'm having the infinite load screen after skipping the training at the Maple Valley, Even with the all working services and not changing fuel. Before that the game had crashed with the "memory can't be read" (or something like that). Now i can't even start the race. My theory was wrong. I really tried to enjoy this game, but the game just doesn't let you do it.

upd.
I verified the game files via steam and after the launch the steam starts gamingrepair application, after that i successfully completed the race even with the skipping training and changing the fuel level. After that i tuned the car throuth the main menu. Then i exit the game and launch it again the progress was saved. This ♥♥♥♥ is so random. I don't even know what to wait after I launch the game.

If this is true, this is absolutely ridiculous...
Having pre-race settings brick the entire session is...embarrassing...
Though admittedly, like @Hotdog Vendor, i'm almost to tired of this trashpile to try it myself.
It's just so much time investment for potentially nothing...
