Axes, maces, spears can't be used as off hand weapon. But daggers and swords can.
To be able to equip dagger in left hand, your character must have Dagger skill with Expert level (Rank 4).
To be able to equip sword in left hand, your character must have Sword skill with Master level (Rank 8).
As for information, if you open your character's screen and right-click on Sword or Dagger skill, you'll be able to see the description of the skill, and the list of benefits which are provided with each skill degree.
I haven't gotten any blasters yet, just wondering.

About blasters - I kind of forgot if you can wield blaster and other weapon at the same time, sorry. But what I do know is when you get blasters - you won't need any other weapon at all. :)
For a mage in these games I have used both staffs (2 - handed) and daggers (dual). IMO it does not matter, both are pretty close in power/weakness. There is diminishing benefit to accuracy past a certain point so I spread it around (obtained by barrels) and, often, use all characters for melee. The Staff stun ability counterbalances, IMO, the slightly higher damage of dual daggers (for a Mage), making it pretty much a wash.
Vampire in Might and Magic 8 is, in fact, a paladin without ability to wear plate armor. I woudn't say that he's weak, he has ability to regenerate HP and steal other enemies life, after all. As for weapons, he can use both sword and dagger, and he can become Grandmaster in Dagger skill, getting great benefits from this weapon.
Now, for mage in Might and Magic VI best choice is dual daggers, of course.
Your mage can wield two weapons. Plus they both might be charmed with either fire, cold, electricity or poison. Plus small chance to cause triple damage on Master degree.

I've played 300 hours or so on this game, so I know it well. But it's my first try on MM7. I also have MM8 for later...

Start the game with default party first (Knight, Thief, Cleric, Sorcerer. Or you can replace Knight with Paladin). It will be much less painful to get used to the game.
All in all, if you'll have any specific questions - just write them in separate topic. Though for the last time I've finished MM7 few years ago, I still remember some good stuff, so I'll gladly help. :)
Yeah, I'll probably start with a Paladin instead of a Knight. Characters just seem more interesting with spell abilities. :)
At least in 8 you are not (nearly) forced to have an (almost) non-magical thief in the party just to be able to open chests. Other chest openers in MM7 are not really adequate.
