Key thing though: Gathering iron off the surface with iron tools works fine. Mining for iron with iron tools destroys tools rather quickly. Never ever set up an iron mine until you've got a mine that can produce some coal doing well (coal is needed to turn iron into steel).
Another problem might be what have you set as those workers' production goals? If you ask them to produce steel tools and you don't have any coal, they'll just stop producing. Set them to make iron tools until you've got coal available. With the tailors, don't choose the types of clothing that require wool until you've got some meadows with sheep that are producing it (takes a bit of time, needs that thing on the river you buy and sell to merchants with).
Remember that you should try to keep at least one spare meadow that's NOT being used available whenever possible. This allows you to split your herd and split off the sick animals into one of your spare meadows. Trying to build one when you've got a plague going could make it harder to deal with the disease. Hospitals are another building you should build once you're more likely to need them, not the moment you've got a disease running rampant. You can assign no staff to it and throw a laborer at it when needed. Game doesn't seem to care if doctors are educated (just like teachers).
And that includes food.
