Not really. I usually have a bunch of herbalists derping around but don't care much about stock. Having a varied diet gives me plenty of hearts already.
Actually, scratch that. I've been checking my health numbers and it's showing to have been decreasing in my town for some time now. So thanks OP, you've saved my town's health :D
I read someone that made a gatherer friggin' far away from everything else to pick up herbs and another one in the middle of town to act as a pharmacy. You can try that if you find having them accessible to your citizens hurts their efficiency.

Foresters harvest fully mature trees.
Maverick's town forester is doing decently because there is old growth woods around the town, away from any foresters.
Try placing an herbalist and forester out on the edge somewhere and have the forester only plant trees for a while until the forest is thick. When the woods are lush, demolish the forester. This should provide all the herbs you need for a few hundred people.
I like trees around my towns so I also tend to drop a one man, plant-only forester in town and leave 2 tile wide gaps here and there for the trees. An herbalist in the center of my towns does pretty well.
