15x15 is the biggest you'd ever want to go but that requires 2-3 workers and you qould be getting the last of the harvest right on winter. Sometimes you just have to go with the size that will fit into your city plan
Why 4 ? Because i can put a house in front of it for shorter path :)
A house usually has 1 to 3 workers so I put one field, one house with road and another field to minimize distance with work.
On long term :
- if it is a field I never had a drop in production. Every year I have 420 food per field (or per worker).
- for orchards it's variant between 210 and 420 depending of the number that are being re-planted
