Note that you don't need to have five workers assigned to the farm all year round. Once the fields are sown you can stop work there until it's time to harvest.
In my experience, which isn't all that much, I found that the farmers dawdle to much if there are too many of them on one field. If you build 5 small fields 8X10 you have 400 sq ft of farmland using only 5 farmers. One 15 X 15 field is only 225 sq ft of farming area and your using 3 tines the number of farmers.

Does the crop chosen make a difference?
Yeah. Different crops have different growth times and temperatures, etc.
I just plant them all with a focus on Corn, Wheat and Beans since they grow the fastest.
If you look at the barn head on, the door with a low roof on the right is the useable door.
