Hunting cabins can work both in forests and on fields, but they're more efficient in forests.
Because of this, it's best to put them in a forest cluster (forester lodge + harvester + hunting cabin + herbalist).
Consider not cutting trees in your forest cluster, and simply having another forest somewhere with just a couple of forester lodges for tree-cutting.
I call this a 'Tendancy' because I often notice a few deer hanging around the east part of the village for no reason whatsoever. So go figure.
I'd say the best spot to place them are where several migratory paths meet. You'll notice groups of deer like to hang around water sources. try to place your cabin so the groups are encompassed. They'll leave while the cabin is constructed, but they'll always return - you're near the water source after all.
Try tracking their movements as you play, take note of where they move, and you can have optimal hunting spots mapped out.
