Of course sheep give you wool as well as mea and cattle gives you meat and leather.
Another thing you can do short of trading is build a new pasture and then transfer at least two from your existing pasture into the new pasture.
it will show message near your pannels that trader have come after that you just need to check trader whether or not he got the animals you need (there is multible different traders only one of them brings animals rest bring seeds or normal resources)
Although I must admit I too thought I would have to wait and buy a second cow, my sheep started to have babies, but they all got sucked up by a tornado. It was very surprising to see more cows than the initial one i purchased. Same with chickens, only need to buy one.

This is not correct. You only need one to breed. Same goes for chickens and sheep.
How do you transfer them to another pasture?
Much like many things, there seems to be a lot of randomness to Banished.
In my games one sheep has always been enough to start up a new herd and will have a lamb in short order, same with chickens, but cattle on the other hand... I've tried it with 1 cattle and it died before it gave birth, so I tried it multiple times with 3 cattle and they too all died before having any calves. So I upped it to buying 5 cattle and finally they had a calf and my cattle production got off to a start. So for me thus far in the 90+ hours that I've played Banished I've had terrible luck starting with just one cattle but immensely good luck with starting with just one sheep on each of the game saves that I've played now.
You can also do the same thing only splitting them instead of emptying them if you have a minimum of 10 animals in the originating pasture and instead of using the empty button you would use the split button in the pasture window.
After checking I have found the total is back to 7. They killed one of my cows!! It is a farm
I guess.
