However it is possible for certain things that your citizens "get over it." Less likely, but possible (as far as I understand). So long as you have an Herbalist, the citizens will treat this like a pseudo doctor (helps keep health up). A healthy citizen is more likely to improve from a sickness (in general, and faster) than an unhealthy one (one to five hearts).

It didn't get better after I varied the food, it got worse. My Adam got dysenterry, so I put Eve in the herbalist's hut and she quickly gathered the limit, then Adam got better and their health began to improve.
So, I think it's not enough to have herbs, but you need the herbalist or a physician to prescribe the herbs and medicines. Without the active physician or herbalist, the citizen doesn't know to use a poultice. Not sure if educated vs. uneducated makes a difference here though. I always improve my citizens' health by staffing at least 1 herbalist and/or physician.
Can you confirm if an educated citizen will be able to use medicine without help thnough?
If you have no one working at the herbalist hut, the herbs will stay in storage, and if your unhealthy people visit the herbalist, nothing will happen until you put a worker there.
Herbs/Herbalists only matter for the global health "hearts" thing. They can't cure people who catch a cold or fever or plague. Those need to visit the hospital.
The Hospital doesn't use herbs but again, if you have no doctor people won't get cured there. Or at least they won't get cured any faster than they would if they stayed at home.
For some diseases, your villagers can recover on their own slowly, some other will kill them if you have no hospital. If they are unhealthy to start with, they might die even if you have a doctor to try and cure them.
No, education doesn't matter in regards to herb usage. You must have a working herbalist to use herbs.
