Additional seeds
Something I might have missed in the tutorial -- is there a point in extra seeds from a trader? Right now I just have corn and peppers, is there a reason to spend 2500 for a new type of seed?

Crop seeds: grains (wheat, corn) and vegetable.

Orchard seeds: fruits and protein (nuts).

You will be fine with one of each type. There are some differences between them. For example, bean and cabbage are fast growing crops, some are hardier in harsher weather; you can only use wheat and fruits to make ale...

For me, 3-4 crop and 3 orchard seeds are enough. I will usually get wheat, corn, bean/cabbage, apple, one type of nut, then one additional fruit and vege of any kind.

Most of them are very similar. But there are some differences. I think squash works in very cold climates, but has a relatively low yield.

As said, bean is pretty cool.

Wheat can be turned into ale! But you need 100 wheat for one batch, as opposed to 60 berries or 30 fruit. But you don't have to deal with the downsides of orchards for that.
Its nice to have lots of seeds because it gives you somthing to spend money on and work towards, however other than that there are purposes specifically for the new crops depending on how many mods you have installed

To keep infestations from spreading, it's best to not have fields of the same crops or orchards side by side. I also just like how it looks to have various crops/orchards. Since I play with mods, there's a lot more you can do with the different crops: produce flour/make bread, make wine (not just ale), press into oil, tinned fruit or veggies, make cloth, and so on.

I had the same question. I have a 60+ years old, 1400+ population town with hundreds of farmers and never had a reason to buy extra seeds after the first time. The same goes for cattle, sheep etc. If you have enough, and dozens of herdsmen like me, then it's easier to split existing herds than to wait for new to arrive.
