I also dislike the map boundaries, but think, if they weren't there, you would have players off in the middle of nowhere and not contributing to the fight. Its basically a necessary evil.
As for camping out in the trench, that is realistic. Most days in the life of a WWI soldier were spent sitting in a muddy, rat-infested trench and taking a few potshots once in a while if he spotted an enemy.

Technically, the "bot" simulates the highest command structure. Orders were relayed to soldiers in the Trench form Headquarters via Runners. When Headquarters said you went over the top, you went over the top. When Headquarters ordered you to withdraw, you withdrew.
Disobeying orders in World War I typically resulted in you being summarily executed for cowardice.
This is a fun game, but sadly, I can't deny that it will probably always be niche. Most people these days are expecting the typical arena run around style of gameplay - where this is very structured and team-based. IMHO also you can't just lay in a trench and expect good results if it's your teams turn to assault - you'll never gain ground or win this way, you have to advance somehow. Even when defending staying in the same position in a trench is fatal, your position will be given away the more shots you take from that location and you can expect a grenade, mortar, or smoke to eventually flush you out.
I'm sad you didn't enjoy it. You probably never will. The game grabbed me by the short and curlies right away. But it's admittedly not without flaw. I'd implore you give it more of a chance to grow on you but this kinda seems like a make or break game - you either like the unique, restrictive, team based mechanics or hate them.
Heroes and Generals? You talk about realism and you bring up Heroes and Generals? Heroes and Generals is about as far from realism as you can get. Don't even use "simulation" in the same sentence as "Heroes and Generals". I wouldn't even call Heroes and Generals a Second World War game, just a game that happens to have equipment, vehicles, and weapons from the Second World War. It's just so unrealistic.
Also, if you want more mobile warfare... don't play a First World War game. You do understand the concept of trench warfare, don't you? You do understand that the First World War was composed of trench warfare? And you do understand that Verdun is a First World War game? If you want to stand up and run around the map without being shot in under two seconds, play another game. This is realism. This is Verdun. And if you want überrealistic trench warfare, you'd be sitting unmoving in a trench a hundred times more.

OP is right -- the confined nature of the attack areas mean campers can constantly knock down attackers trying to play to the spirit of the game intended by the Devs.
I fear many people will tire of getting constantly killed briefly after spawning and being shot by players who cannot be located. The game may need readjustment in the light of how people actually want to play the game rather than the historical reality.
The game is a great concept and well executed but it does lack a certain balance.
If anything, they may need to just show players what trench warfare is other than camping your own trench the entire map. If you're doing your best to attack the enemy and sneak into their trench during the attack phase, that may be why you're bored as hell. Cause nothing beats sneaking across no man's land to finally get into the enemy trench and wreak havoc, and then after all that adrenaline, it's nice to take a break and have a defense round.
