So i'm like 20 hours in and trying to upgrade my ship so it looks super badass and big, does your ship actually get bigger like the level 48 ships you see? Also what is the quickest way to get metal? I'm having so much trouble finding them

Get a wanted level and the ships that come after you will have metal.

The quickest way I found is in the bottom right corner. Nothing but english frigates with 100-150 metal. And no your ship does not get bigger, it just gets in better states of repair (as you quartermaster pointed out it was in shambles when you took it, probably due to the laxity of the crew which allowed you to steal it in the first place) and then gets armor plating and reinforcements. And the bigger the ship, the slower the ship. Pirates liked brigs for how nimble they were versus ships of the wall. One ship of the line is a big fat cow sitting to be taken, hence why pirates operating alone would not want them. You need many ships of the wall operating wiith smaller sahips to be effective.

I just sail around from place to place and dont attack any ships unless they have 70+ metal
I also recommend doing warehouse quests as there are some that give 100-150 metal as well
