What do items do and how do I use them?
I keep finding rings and like... I have one called Helios' Blessing. What are these and how do I use them?

You mean the Items you find when you use the Statues? They give you a Passive Bonus.

Helios Blessing gives you Bonus Gold Drops. No idea how much but you noticeably find a lot more gold with it.
Hermes Boots let you walk over Spikes without getting damaged.
The Compass leads you to a secret Room with 2 big Chests.

Then there is another Item (Obolos or whatever)that lets you pass the Gatekeeper once without paying the gold Fee.

The Hedgehog item is the only one that adds a bad effect. With that item you lose Gold whenever you get hit.

The item letting you pass Charon for free once is called Charon's Obol, it's awesome for saving up for that incredibly expensive upgrade you need, hermes boots is pretty awesome with how you can walk across spikes without taking damage, though you should note that they do not reduce the damage of the spike traps.

Awesome, I haven't seen that one.
There's also a ring (I forget exactly what it was called) that gives an auto-res upon death, from what I'd seen

Is it possible to find more than one statue in the same run? If so, is it possible for the second statue to override the item from the first statue?

I have seen two statues in one run, but I was afraid of getting the curse from the second one so I didn't try it. I would imagine it does override just like finding a new spell item would.
The secret room that the compass leads you to, does that room exist if you don't have the compass? And if so can you enter it?

Yes it does. There will be a slightly transparent pulsing circle on the map when you are in a room, and I believe the surface where the entrance is (at least the one I saw) will sparkle. Use your spell and it'll let you enter.
