I have read that it also changes the ending slightly, if you beat the Final Boss as a Gay character. I do NOT know the details, but I assume the ending shows who is supposed to be the characters spouse, and Gay changes them

That is precisely correct. At the ending, you get shown your character's family, and the spouse gender changes. Other than that and the statues, it does nothing.
Reverses which statue (knight or lady) grants the chicken leg or mana potion in waypoint rooms.
Changing who greets the player as their lover in the final cutscene.
Therefore, if the Left Statue is always chicken, and Right is always Mana Potion, then Gay reverses where the Knight and Lady statues are compared to normal.
