Put yourself in the outside view by pressing 2, then when you are not far away from the place where you want to take the screenshot, hit 8 then quickly hit PAUSE. This will stop the train but leave you in the freely floating camera view. Use the arrow keys to move yourself ahead to the position where you want to take the picture (you can move quite a long distance ahead or above if you wish), then hit PAUSE again to release the train and then wait for it to arrive where you are.
When done, press 1 or 2 to exit the freely floating camera and return to your loco.
P.S. Of course you can also take pictures with the fixed outside view 2 although its disadvantage is that it is always looking directly at the loco, even though you can move the camera closer or away and rotate it around the loco, and it is difficult to frame the picture the way you want.
I usually pause the train again to make sure I have a worthwhile view and to make any fine adjustments.
