You can display just wagons in the menu list for putting them in the world by clicking the waggon icon, which if I remember was the 3rd one, from the second menu box. If some wagons are missing, it's because you have not enabled them as DLC, and for that you need to click on a blue square/box icon with a little orange arrow. You will then get a menu on the right and there you can search for that DLC and enable them.
For which wagon to what DLC it belongs is a tricky task to tell. Wagons in the game are not listed as a "tank/hopper/whatever wagon", but they use the UIC classification of goods( https://en.wikipedia.org/wiki/UIC_classification_of_goods_wagons ). This means that a passenger wagon is listed as an Ampz, Bmpz, Am wagon, or a freight wagon might be named Falns, Flacs, Fals etc. If you are familiar with those classifications of wagons you will find the ones you are looking for, but if not you just need to preview them and find the one you need.
Now most of the newer releases of DTG's DLC has the DLC name in [ ] - brackets, so you can tell from which DLC does the rolling stock belong (example: [BR155] Habbins, [CK] BR101). For the older DLC though, not all rolling stock has such hint about the DLC it belongs.

Let's say that I have a route and on that route is a car manufacturing plant. I decide that I want to create a scenario that brings car carriers full of cars from the plant to the switch yard 10 miles up the line. If that route does not contain car carriers then I need to figure out which route/loco package does even if I do not yet own a package that has that type of freight car. Some list that will tell me that a car carrier comes with Route X, Route Y, and also with Locomotive Z.
There are some wagon packs that are available as DLC. Also I think every loco DLC comes with some wagons and the exact ones are listed always in the description of what the DLC includes (example http://store.steampowered.com/app/376934/). As far as I am aware though, something like a database that lists wagons in DLC as categories does not exist. You will have to manually browse DLCs and see what they offer, or you will have to google "Train Simulator <wagon type>" and hope to find what you are looking for fast.
U.S. Rolling Stock in DLC Packs that lists all cars available in DLC's . The author also plans on listing other countries cars also. Also Googling for Rail Simulator car carriers should list download sites with that content. I have used that method to find Airslide Hoppers.
