However I'm going to stick with express passenger or MT locos and broaden out my suggestions a little to three locos. First, the context. I prefer locos that can be driven in advanced mode without a HUD and have a performance that is at least approaching that of the real loco.
So without further ado and in no particular order:
JT BR 7MT "Britannia" class. (This was originally sold by JT, but it wasn't made by JT).
JT LNER Class V2 (Another that was originally sold by JT but I think was made by someone else).
Bossman Games' LMS Rebuilt Royal Scot.
You will find the V2 listed under Routes, for some strange reason or accident!
USA: Smokebox FEF-3.
To be fair, I wouldn't say no to Victory Works S-160 either.

Bossman Games steam locomotives are by far the best.
Try the Black 5, or if you want something faster, the Jubilee or Royal Scot.

The more you learn, more enjoyable they become. I now take scenarios with other steam (and diesel!) engines and run them subbing in Smokebox Locos.
Visually they are stunning and fun to drive wirh a HUD. However, what’s even better are the physics and the mechanics of driving and firing in the advanced versions. It is challenging, consuming, and immersive. And, Smokebox is happy to answer any questions you might have about the intricacies of driving.
I second the votes for the FEF. However, I also love the AT&N consolidation; it’s a different and somewhat more laid back experience. The 19th century Cheyenne and Promontory locos are also excellent and give a great feel for early railroading.

The powerful 7F Super D is very well simulated and a challenge to drive on gradients, but very rewarding when fired and driven correctly (detailed study of the manual is essential).
The Bossman Black Five is also well simulated and rather more 'real world' than other TS Black Fives released over the years (again, study of the manual essential).
