Are you playing in Windowed mode?
Are you using the Windows default resolution in TS2017 or someother resolution?
What monitor size and resolution are you using?

The game seems to want to load in Windowed mode as i can't access the game settings to change it

and for monitors I play games on my middle monitor which is a 25" 2560 x 1440P resolution

Impressive gear!
But... why do you have different RAMs, ideally you should try to have all RAMs the same (same brand, same specs).
Did you try switching Windows to one screen only before running the game?
And also try to make the game (using nvidia Control Panel) only on one GPU for a test? I don't know it it likes SLI.

As TMarc says this is a multi-monitor issue .
