I literally got the gold shield and it never registered a parry. It is clearly broken. Just because it worked for you, doesn't mean it's working for everyone. I was forced to quit a stream over it being so busted.

I watched about ten fish caught in your video and it seems that the button is pressed very slightly too late (maybe half a second).
Just because a little golden shield appears on the right doesn't mean it's successful. At the bottom of the screen (the health bar), when the Block is successful a green shield appears. When I succeed in the Parry it's a golden shield that appears there and the sound is slightly different.
Maybe you can try again when you're in better shape (before 3rd March bc the demo will end)?

Yeah checked your video and seems it's a timing issue

In the time I've spent playing the demo the window for the gold shield is short but good timing helps
