Hmm.. I'll do a double check later. Because I remember not getting hit somehow by those bad guys. However, those bad guys with masks do block my attack a lot,that usually cost me a lot of health and medkits because they could strike back as soon as they block me. And kicking doesn't seem to interrupt their attacks at all.
Ye. You can also sort of dodge attacks by moving while zombies try to grapple onto you, although it's not a reliable method. It's noticable by the screen shake, but not taking damage.
Block:
- Using a shield. You can also stagger them by blocking right before they hit you. (shield is not a weapon. Its an item, just like Fire crackers, UV Fleshlight etc)
Grapple:
- Counter an attack and throw them around. Works only at Biters, Virals and Human Enemies
There is sometimes one who survive the attack and rush toward you but he is weakened enough to be put down in 2 strikes.
.. You know, firecrackers are molotovs' best friends. Use them more.
The Shield -- once you place it in one of the 4 item slots, same slots that grenades, molotovs, firecrackers, and throwing weapons use, you can just use that Item Use Key (for me I made it G for grenade) and that will raise it (provided the Shield is selected as the current item).
Once the Shield is Raised, you can hold it raised as long as you hold down the G key (or whatever is you use item key for using grenades, etc.
You can upgrade the Skill for Shields, and if you do and time the block within a second of being hit (or so), the attacker will be staggered back.
You can also Craft Special Shields. These will "proc" a weapon effect, such as Impulse (launch them back), Freeze (which will chill them, perhaps maybe even freeze them), and Electricity (which will be electrify them).
Now, originally I did not see the Shields being damaged at all. But in The Following I have used the shields a lot recently against Bandits, and they are damaging the shields with their Superior Short Swords and perhaps Gunfire.
Shields are very useful for blocking gunfire and allowing melee fighting after you close in. From my experience last night in The Following, you can still get hit sometimes by gunfire. Of course, you do take some minor staggering often as well from melee attacks.
Shields do take damage, and I had one break for the first time last night in the Following fighting bandits. I guess it is patched up, at least in the Following.
Human Enemies will adjust their fighting style a lot, even on normal, once the shield blocks an attack, so it isn't a cure-all, but they still do the occasional attack you can block. The real advantage is the stagger plus any proc'ed effect, and the blocking of bullets.
Not sure if Volatile attacks can be blocked by shields, if so then the Electrify might be very effective as a proc on a shield. It does work on Virals, of course, but they may also adapt somewhat, but not as much I think as humans.

On Parrying -- my memory is that if you attack simultaneously to an attacker, a parry will be shown. This is one of the cool things that are often not discussed in Dying Light. People presume the devs aren't that smart, and often are proven otherwise.
Otherwise there is a Dodge skill. In my case, I have the Dodge key as Spacebar, and I simply hit a movement key at the same time.

With both the Shield and Dodging, in some ways, you can play it much like in Skyrim. This is why I often say, when you own Dying Light, you really have many games in one and it can replace many other games. All depends on how you play it. I love having it as a beat down simulator. Just go in and beat on things. Great to release frustration.
