Now, the diffirence between the Enhanced Edition and the definitive edition is 1€ in price, and that extra 1€ basically gets you all the skin DLC, minus two that are free which you have to manually "add" to your steam account afterwards.
I am considering buying Dying Light 1 atm, and even tho the definitive edition is only 1€ more, I really don't see a point in buying 22 skin DLC that adds no real content to the game, but that might just be me.
This guide might be useful too, as there actually is a few skin DLC which adds some other variants of gun in the game.

Definitive Edition is the game and all released DLCs.
Definitive DLC Collection is just all paid DLCs, no game.
