Does all this loot at the pawnshop respawn? How long does it take?

Most all of it, yes.
Not sure how long between respawn, but not long.

Same with the Pharmacy building next to the market - great loot spot too

3 strings and a blade, no big deal. You can get this stuff almost everywhere.
Respawn is a mix between (ingame) time and distance.
Approax. 8 hours ingame and 300 meters distance, loot will respawn.

Thanks! The string is the thing really, unfortunate that both molotovs and throwing knives need it.

You need knives. I could give you Knives. Are you, going to make the throw weapons run on the prison off the bounty board ?..
