What's the urgency of seeing as many people as possible?
Is it just a money thing, or does it affect anything else? I know it's technically possible to miss people vital to the story if you take ridiculously long with certain people, but I assume maybe they come back the next day or something? And how many game days does the game actually last?

You can afford to take your time with the entrants. It's only "urgent" if you're badly in need of some extra cash. Some days are cut short by terrorist attacks, but the day won't end and the terrorists won't attack until you complete all the scripted events for the day.

The more citations you earn in a day, the faster you need to process entrants to make up for the lost wages and fines. Earning citations on days that end in a terrorist attack are more costly than on days that go until 6 pm. If you just take your time and scan each entrant's papers methodically, you shouldn't be pressured by the clock.

The game lasts for 31 days max, but you can discover several alternate endings before the end of the Arstotzka storyline.

I thought that you don't earn any money for any entrants after 6pm? So once the buzzer sounds, that's it, you don't get paid for anyone else afterwards. I've had two or three entrants after 6pm, too. I guess they were necessary to further the story? Perhaps I'm really slow? I've maxed maybe 6 entrants per day at the most. Granted, that's my first play through and only for one hour, so I didn't know what I was doing at first

Incidentally, my family all died of disease because I never earned enough money. I think I need to up the pace... so yeah, I have to disagree with wlayton27, I think you do need to process people as quickly and as accurately as possible or your family will die.

First time players usually have that same experience, so I'd recommend the "easy mode" option for a first go and just do a week or two until you get the hang of it. A second time through those first few weeks should be considerably more fruitful. I had the same experience on my first attempt with a dead family about a week in.

Your goals should be to process 15 entrants on an average full day and 6-8 on a day ending in a terrorist attack. To reach that goal, you should be averaging roughly 25-30 seconds per entrant. Green stamps take longer than red stamps because you go over every block, stamp and photo and double check a few blocks just to be sure it's clear for entry. I estimate about 45 seconds per green stamp and 10-25 seconds per red. Checking expiration dates should be among the first 3 items you inspect as they're the most common discrepancies. Reducing the time on stamping "denied" for expired papers is the greatest timesaver in the game.

The clock goes double speed on day one so you only have a few minutes of play time, but there is no need to analyze anything in the passports; the color of the booklet containing the visa is all you need to know in order to select the proper stamp.

With enough experience, you should be able to hit 18 entrants on day 1, 7 on day 2, 25+ on day 3, and about 22-24 on most full days until the blue stamp becomes a requirement, then back to around 18-20 per full day. It's not being familiar with the layout and not having a "system" for inspecting papers efficiently that handicaps new players.

I generally get at least 15 per day. I enabled easy mode, but every single day I would of been fine without it.

And yeah, once you get into a system that works for you, your good to go. I can usually scan over stuff pretty quick, and have set places for documents. Like near the end, on the left side of the desk I have the vaccination certificate on the bottom, and access permit/asylum grant/diplomatic auth on top, and on the right I have the passport, with the work pass on top for a few seconds if necessary. I then cross check the documents one by one with the passport, eventually leading to a conclusion :)

18~20 average on a day? .. lol you serious? Maybe you are talking these are the numbers you should be getting on easy mode, right?
I have around 20 hours on the game, I pretty much got the hang of it and my average is around 10~11 on a normal day, normal difficulty. Although I mostly use the mouse and rarely use the keyboard shortcuts.
