But well there is a huge variety of builds that can be played in this game and what you like the most really depends on your personal preferences.
Since you are just starting out I'll suggest a few buiilds that don't require much currency/gear to do:
Totem Builds, especially Flame Totems (with GMP) are pretty great
Freeze Pulsers
Spectral Throw (new skill gem) incredibly popular, incredibly easy to play and pretty fun
Lightning Strike, the "oldschool" spectral throw basically making melee a semi ranged character, also love the sound effects on this one
Ethereal Knives, spell but physical, pretty fun to play once you get used to it
Could name a few more but that should give you a glimpse of possible builds, when it comes to class it really doesn't matter that much.
The class only determines the position you start on the skill tree, most of the builds including the ones I've listed are playable with multiple classes.
Easy to start are Templars, Marauders and the Scion.
What's fun to you subjective, obviously. If a summoner is too passive for you, you could do a shotgun fireball witch, or you play something more hybrid-y, like a Spectral Throw build that MrSmith mentioned (typically uses ST and a melee attack, Double Strike typically). But it's on the overpowered side and also repetitive, but every build is, if you only look at the technical execution.
In all other ARPGS you gain a couple of levels = you gain a new skill. Or maybe you upgrade a skill or add an additional effect. A lot of times these new skills/powerups are lame but sometimes they are awesome and change the way you play which keeps the game fresh.
In POE I just stick with fireball or 2-3 skills which level up on their own?
Skill gems that are somewhere in your equipment get XP when your character does. If they have accumulated enough XP, they level up. That's like you'd put a point in a skill in other RPGs. Every class can use every skill gem, if they meet the stats and level requirements.
There are also support gems which do not provide a skill, but augment one (items need to have linked sockets for this). For example, if you put the "Lesser Multiple Projectiles" support gem in a socket that is linked to the socket that has the Fireball gem, you now shoot 3 fireballs instead of one. You can further augment this with, for example, "Fire Penetration". Your three fireballs now pierce resistance.
Items can have up to 6 linked sockets (chests and weapons), though it's hard to get those. Some orbs allow you to make new links or change the color of sockets.
Basically,you can customize your spells/skills and improve or change them in ways you'd like.
