Why?
Because health works against all damage types, armour only mitigates physical hits. Also some side effects of higher health pools such as increased effectiveness of life leech (default: 20%/s cap), life regen%,...

The hits are simply so big that they ignore any armour you might have.
Good rule of thumb would be minimum 1.2k life per end of difficulty, but more is always better.
Learn the boss skill patterns on youtube and dodge the hits.
