The green contracts form 5 storylines, each focusing on a different character, and each storyline finishes with a unique (brown) contract. These brown contracts can drop indefinitely. If you've ever seen a brown contract in this league, then this means that you'lve completed all green contracts for this storyline and won't see those again this league.
Regarding getting all professions to 5: You don't need green contracts for that. You can do this with regular contracts (which should drop anytime you find a smuggler's cache in your maps), or you can buy low-level contracts from Whakano, he gets about a dozen fresh ones every day.
For both Demolition and Trap Disarmament, Vinderi is indeed the only character who can get to level 5 naturally. Tibbs and Isla can theoretically get there with gear providing "+1 to job level", but I've actually never seen this modifier - either I've been very unlucky, or it's extremely rare.
