Which classes can use two swords, axes, etc ?

Every class can use every weapon-type and combination of them. Classes also don't restrict skill usage.

I'd recommend checking out Duelist or Marauder for two-handed "melee" combat.

edit: Kind of assumed a "handed" in your question... For dual-wielding melee weapons, one would consider Duelist or Shadow first.

As The_Driver already said you can use any weapon or skill gem. The importance of your class lies in where you start on the Passive Skill Tree (and your Ascendancies), since there's a lot of weapon type specific nodes and you might be unable to reach them if you pick a class that starts on the other side of the tree.

As an example, I'm playing the Ranger class with the Deadeye ascendancy, but using 2 one-handed rapiers and using melee-based skills.

I'd also recommend checking out build guides out there, since they help give a good feel of what works with specific classes, builds, skills etc.

The Barbarian and Duelist have specs for this - barb for axes and duelist for swords and dual-wielding.

While there are specific weapon type nodes on the tree, they also aren't at all necessary to use those weapons. Other classes have nodes near them that can be equally beneficial while using those weapons based on the skills you pick. For example elemental damage nodes while using an elemental melee attack, or poison damage, or crit chance/damage, or you can convert minion damage nodes to player damage nodes, or turn spell damage into melee damage. There's general dual wielding nodes, general 1h melee nodes, then there are nodes specific to swords or axes. Lastly there are cluster jewels giving you access to specific damage types at any corner of the atlas tree. You can pick any sort of damage you want to focus on from anywhere in the tree using any class you want wielding any weapon you want, there's always a way to make it work.

as others have said: in some cases you are better off checking if the specific playstyle you have envisioned can be better off by sacrificing an specialisation for better placement in the tree, reaching either certain nodes and/or big jewel slots for more potential DPS with cluster jewel setups.

Anointments also exist, aka an mechanic allowing you to add an keystone ability (big passive ability in the skill tree) to an amulet (and a special set of unique gear). With that in mind people can skip certain nodes on the tree and invest in other ones instead.

This game is both kinda hectic with all those mechanics but also allows you to play however you like, once you get the gist out of it. Only negative point is how much people require to learn and prepare.
