Gear does help - more life and more resists are needed. Make sure you have 75% elemental resists, and prioritize life after that.
If you're still dying because your cast speed is too slow and enemies are rushing you and hitting you with projectiles that are still causing 1-shots, then you need to use different, more effective and faster skills.
I don't know too many skills yet - still learning - but Arc is super new player-friendly. It's casts very fast, has an instant effect after the cast animation, has crowd control built in, and does a lot of damage while leveling. There's some other skills that are like this - others can assist.
But as they say... a good defense is a good offense. If you kill the enemies instantly before they even do anything to you, you basically can't get 1-shot no matter how bad your gear is :)
You need to pump defenses/health early on or you quickly reach a point where stuff will one-shot you. Make sure you have a lot of +% health nodes on your passive tree (like all the ones near your starting area), and +health on all your gear. Even with that you usually don't want to facetank bosses, if they have an obvious wind-up attack you want to move out of the way.
You certainly are the worst.. dying 50 times with a SUPER easy build during campaign, big LOL <nosarcasm>
You should mentally prepare for that. If that is not your cup of tea, you should consider playing something different sadly. I myself strungled with that and do play some other arpgs from time to time just to take a break from the "hardcore" design of poe.
Get your resists up to a respectable level and get some HP. And by respectable level I mean 50+.
Also don't listen to people who say this is badly designed, literally no idea what they are talking about. They are just upset they need to put thought in to their character.
You can grind some levels on a map that's near your current level and that you can still run easily if you're really stuck.
