Scorching Ray Vs. Incinerate
They're pretty similar, but is noticeably better than the other?

not simmilar at all. and incinerate is probably better because it has a lot more utility

They're both fire spells that increase in damage the longer they are cast.

incinerate is spell that hits and a projectile. it does fire damage and can crit(but has 0% base crit) can ignite (if crits or has % ignite chance nodes/items). lvl 20 - 136 to 204 damage per cast. stage breaks if you stop cast or move
ray doesnt hit(so doesnt proc equilibrium and added damage doesnt work, no curse on hit and so on). cant crit. deals fire burn over time damage. cant ignite. has duration. lvl20 - 474.1 dmg per sec. you can increase stage after you move or stop casting if duration didnt expire

Incinerate is way more effective.

One annoying thing with Ray and Blight is their inability to proc Sprigg of Life's regeneration. Apparently channeling is not spellcasting.

Personally, I like Ray more for the fact that you can cast for a few seconds, then run around and cast again while almost never losing the duration, adding more stacks with each chance you get. Combined with Flame Totem, you get a fun way to play without it being too easy or too difficult.

it dose proc it, but only once per cast, even if that cast is 10 seconds long

With Scorching Ray you can use Controlled Destruction, because it doesn't have crit anyways. It gives a More Spell Damage bonus which is one of the only ways to get Scorched Ray to scale well into late game apparently.

I like the feel of Scorching Ray, but it feels terrible to use at early levels.

That being said there is a new trigger gem for channeld skills coming in 2.5.0, which casts supported spells when you channel
