Basically, if you like the gameplay, I imagine it will be a lot easier for you once you get to that stage with natural progression.
What difficulty did you play it on?
Overall though i'd say it's really a nice new take on the DW games, you should definitely give it a try. Also, if you're trying it on easy mode, ALL attacks can be blocked which does make it a lot easier (Especially for boss fights)

Yes somewhat! The leveling system is done by gaining ranks by leveling your weapons. It kinda forces you to try out other playstyles but you can just grind out the levels of a weapon as high as you can and move on to another weapon.
It's totally possible to make yourself overpowered for the missions. In the full game you're given side missions between main battles that just kinda include: Capture the base, Stop this guy from running away, Find this guy, kill all the guys in the area. That kind of stuff. It's easy to grind it and pretty satisfying as well. Also being able to grind skill points is a thing. For every 100 KO's you get is 3 skill points
The actual game is more lenient... or at least from my experience so far. You will have to pay attention to the tutorials though since some mechanics are extremely important (You can always review it from the help menu).
If you feel "I want to get better at this game" after playing the demo, I really recommend trying the full game.
