Press "V" when near certain enemy officers. It'll trigger a duel where its 1 v 1 and the troops circle around you and your opponent and watch the fight.
The duel itself can be started at anytime if you speedrun through the duel tutorial mission skipping all fights and going directly to the officer who you are forced to duel.
The only requirement needed to start the tutorial duel early is to defeat him in normal combat first, it turns out he can't be defeat him untill win or lose the duel.
Defeating him early forces a dialoge which brings up the duel prompt effectively
skipping the part where he defeats 3 allies.
If he begins to attack the allies with a red attack you can cancel it by attacking him with light or heavy attacks it should cause a closeup which for some reason stops his attack. This works on other important officers however it only works the first time you hit them in a mission. (resets on mission restart or rewind before first contact)
It will take more missions to complete duel challenges but it is a guaranteed duel and it can be quick to do in historical difficulty.
