Fear in Outlast comes from the whole of the situation, not only from gory sights, although the gore adds to the dark atmosphere and shows you that you could be harmed at any moment.
From what you said, I take it the game is not for you, man. Try Amnesia: The Dark Descent over Outlast. It relies a lot less on gore and is one of the best horror games ever made.
In fact, I won't even spend money on movies or games with jump scares anymore because it's such a boring, stupid, annoying, unoriginal hack manuver. The last game series I played with a jump scare was Dead Space and that game wasn't that bad about it actually which is probably one of the reasons it has a decent metascore.
Anyway, gore doesn't bother me because it's passive. Yeah it's overused but at least you can ignore it if need be. Jump scares on othe other hand are like some billy mays sh--head getting in your face and screaming at you to buy a shamwow and there's nothing you can do about it.
