For singleplayer, I think most of the time it really doesn't matter what you choose. I just prefer higher damage and lower Scope wobble.I ignore Recoil completely because you will probably not shoot more than 2 or 3 times in a one "empty lung".
When it comes to multiplayer I have some recomendations.
First off, when you play on a match where "One shot Rifle kills" is selected, you don't need pay attention at all to the damage level. It is obviously why. I prefer lower Scope wobble and Recoil should be lower as much as possible. And here I prefer Lee Enfield (camo).

Secondly, when you play a match where "One shot Rifle kills" is not selected, like Capture the flag, I prefer higher Damage and lower Scope wobble because you'll most likely kill an opponent with a single bullet. Here I don't pay attention on Recoil at all. I'm using Nosin-Nagant (camo).

In conclusion, my favorite Rifle is Nosin-Nagant (camo) and I use it almost all the time. There are probably even better customization from more experienced players but this is mine and I'm really satisfied.
And what about the other rifles
I tried a Lee Enfield as I used to shoot one many years ago... however, with the upgrades to reduce wobbble and flash I find the Gewehr still has enough punch to make plenty of one shot kills. I scored the Airfield Long Shot with the Gewehr @657.33 metres.
After trying the Mosin Nagant..... actually I just looked at your list again... I tried all those. Still the Gewehr gave me the best features for the Campaigns. Those extra rounds can make all the difference when you are faced with a close quarter enemy you failed to spot. To give you some idea of how useful... I always carry a Panzershreck for the sheer fun of blowing up things :) I have only used a sub-machine gun once in 300 plus hours of play and scored only 2 sub machine gun kills. The Gewehr made that possible whilst I often died changing weapon to the Thompson.
