Why is the Original better? In what regard?

More stable and have a more nice graphics with more gold filter, the directors cut edition is a Wii u port, with the additions they put in that version. Have changes in boss fight and they put the dlc (the missing link) inserted into the game and that is a bit strange because the original game havent this dlc into the story but you can play this part separatly.
Both version are nice, but original version is more perfect in that aspects. If you like the game maybe you will play both

If Mister Skobei says the original looks better and its better to install and play The Missing Link after the main mission, then I believe him and do that so. Especially since nobody suggested the opposite and told me that DC would be better in *any* way.
In fact, if you play with a character specialized in stealth, you're going to have a hard time with the bosses because they were designed by a different studio... And it didn't occur to them to think that a lot of people were going to level up things from the stealth tree...
The updated version takes this into account and bosses have an alternative way to be defeated by characters who have specialized in raising stealth skills.
The only visual difference is that they removed the gold tones (which is due to taste) it doesn't seem important to me personally.
And as for stability? Both versions were a disaster at the time... I have gone through both versions of Deus Ex 100% and I recommend that you play the DC because it is the best experience.
But as always do what you want, if you prefer to pay attention to the comment above, suit yourself...

Thankfully there is no GOTY and no final version.
MD's 'anti-cheat' doesn't even work. If it did, the game wouldn't be so easy to mod and disassemble.

Both are great, but i recommend Director's Cut as it is latest version with updated boss fights, DLCs included in the main game and most of all: heavier mod support to improve your overall experience.

I can't speak for the Directors cut of the game but I can tell you that there are some annoying bugs in the original game.
Mainly there are some menu issues where my mouse would stop working, specifically left clicking.
This forced me on many occasions to have to skip cutscenes and save/load using the keyboard.. it's not gamebreaking by any means but it's an annoyance none the less.
The other major annoyance for me will only matter if you're interested in achievement hunting the game.
That being that knocking out enemies is buggy and sometimes enemies you knock out can randomly die for no reason.. and without any indication or notification either.
This will void your Pacifist achievement, and force you to have to reload an older save (providing you actually figure out which NPC died) or, like what happened to me.. force you to play through the entire game again, just for a single achievement..
