Does "overseeing" war battles always result in a defeat?
I've just started playing this game recently and am on Chapter 3, where war battles between your whole caravan and armies of dredge take place. The game didn't explain at all what picking each option does, so I twice tried overseeing my army to avoid a fight (I'm not wild about the combat in this game). Both times I did this I was defeated quite badly, despite initially having more troops than the enemy and the game telling me the enemy looked worried before battle. On the second defeat it even gave me a full game over, despite not losing my whole caravan (I think)!

Is overseeing always a really bad option to choose? Does it always end in defeat? What's the best tactic for approaching these war battles?

From my observations, "Oversee" always leads to a defeat, especially on Hard & Normal difficulties. I don't know the formula behind it, but I think it's no so well balanced. Maybe it's auto-lose if the number of foes is larger that your caravan's combattants (Varl+Fightets).

If you don't like the combat, I suggest you choose "Hold them off" which leads to the easiest posible battle (for each given War), but also to big caravan casualties even if you win.
