As for the demo being removed, I don't see how it is "scummy". Nobody said every game needs to have an active demo at all times.
Unfortunate that you've only now noticed Balatro existing, but there's been many opportunities to test over the past ~9 months for free, some of which were basically the full game with no catch. To give that away now would harm sales, and I doubt the developer wants to spend significant time maintaining and bugtesting a limited and/or outdated demo build anymore.
I think that's the big thing. Most demos it doesn't matter much, but many people have been spending 10s, some even 100s, of hours playing this thing. The demo was effectively a preview build released for free.
