what does this mean in terms of the gameplay?

It means that straights can have an Ace at one end or the other.
A-2-3-4-5 is a straight
T-J-Q-K-A is also a straight
So straights are a bit easier to play once you know that. It also makes a joker like Superposition better.

It also means that if you increase the rank of an Ace by 1 with Strength, for example, it becomes a 2.

The only in game hint that Aces are 1's too is maybe Fibonacci Joker, I can't think of another. But it's very easy to miss. Hence OP's shock, can't really blame them. For anyone with "real poker" experience, it's just common knowledge and Balatro's Aces simply work as expected.

Ace being high is relatively new I think (in terms of card games). There are some ancient games where it is simply a 1.

As for clues, superposition is one (the art suggests it being both high and low.) I guess the fact that it has one pip would be another, and of course the word itself comes from Latin for unit.

Probably worth noting that the ace can go at the top or bottom, but straights don't wrap around with it. QKA23 is not valid.
