Red Deck
Is red deck stacked or something? I've beaten blue to nebula with not much issue but I keep going back to do red deck but keep failing.

No, red deck isn't stacked. You've just maybe had a small run of bad luck coinciding with a deck you're perhaps less familiar with.
playstyle matters so much.

having one more or less discard or hand really does mess with your path to success.
So you've beaten the game with the Black deck. Most people would say Black deck is the toughest of the 15 decks.

See it this way. If you started a Black deck run with a free made up joker in your lineup that gave you "+1 hand AND +1 discard", you'd be in a very good spot. Such a joker does not exist, but it would be a decent joker in many situations, for any deck.

Black deck with that joker is Red deck. So you can 100% win with Red deck.

I think I just got really lucky with the black deck. I must've done the red deck 30 times and I still get unlucky or mess it up :/ thanks for the advice though.

Focus on 2 or 3 hands and buy planet cards for them and use either normal multiplier jokers or jokers that specifically multiply the hands you focus on. You could focus on just one hand and leveling it up to a ridiculous degree and aim for the ability to also one-shot kill in the later stages, but then you run the risk losing a boss blind, for example, due to it disabling repeat hands or something else that sabotages the hand you focus on. So always focus on leveling up at least two hands.

Whenever possible, buy also playing cards with seals and tarrot cards that can enhance your play, but you can do without them if you play your cards right (i.e. leveling up enough the hands you play mostly with). I won runs without them as a way to challenge myself, but why make life difficult if your aim is to just win a deck?

I primarily beat decks by leveling up Full House, Two Pair and Pair and using jokers that multiply these hands. Aside from that, luck will always play a part whether you make it or not. That's simply the nature of the game.

The Red Deck is not stacked as it is the first deck you are starting with. I think it is how to use discards and to figure out which hands you want to focus on while adapting to the jokers you acquire during a run.
I finally did it! It was the 7th deck I completed and must've taken me 30+ tries. Won mostly because of the bull card and a butt load of cash in the pot, I could play pretty much any hand and win the ante. Thank you for the advice everyone, it was a huge help.
