Achievement for beating Gold Stake with every joker

I realize it's meant to be challenge but how is anyone expected to do this? Just by hoping for a negative effect on every single joker? It's already insanely hard enough to win on Gold stake.

It's not about one run... You get gold stake on your joker in your collection when you win a run on gold stake difficulty. Simply just win games on that difficulty with every joker.

I get that, but there are some jokers that aren't meant to be won with.

Well, since the devs seem responsive to feedback (see The Arm change), I'm hoping Gold Stake is gonna get changed into something actually enjoyable to play instead of a glorified slot machine. I suggest you bide your time, maybe do the challenges in the meantime, those are actually meaningfully difficult or at least interesting for the most part.

just beating gold stake on all decks (not jokers) would take so long I expect to encounter all negative jokers on the way to it...

Great advice, I sure hope they change it too, at least the achievement.

Sure, you'll encounter them all multiple times I'm sure. You do still have to win with them which is a whole other thing.
