Green deck basically operates like any other deck except you don't need to save up and keep your first $25, you can just keep spending that if you like. Generally skip small blinds, look for jokers that give reliable amounts of mult without needing specific cards, things like (but not limited to) torn joker, misprint, gros michal and so on. Your main hand of choice should be pairs or high card and just look out for some jokers to give you mult multipliers which aren't too limiting.
Really, the only downside of green deck is that your discards are no longer "free" and you're effectively losing money using them up, while the upside is you never have to worry about interest at all.

"Early on", in this context, is something like ante 1 to 3. The money made can be impressive.
That early, you could even grab say a Golden Joker on top of scoring jokers and make money for the future, even if it won't pay interest. As you said, such a joker can become a problem, using a slot and providing no help with score. Time to sell it then.
Gold cards, gold seals, anything making money that is not using a joker slot is always worth considering. Because you'll likely need some form of income aside from your remaining hand/discard at the end of rounds.
