I wish the game mentioned stuff like card-area trigger order somewhere, in some advanced help menu or something. I enjoyed figuring it out, but other people keep failing to do so and reporting "bugs" when things don't work the way they want them to.

This. Ace has always been 1 or 11 in basic poker.
Personally, I think the reason people missed this is because Aces always sit on the far right when sort by rank, so it's fair to assume it wouldn't make Straight. This is something only Poker players know in advance, the ingame Tutorial didn't teach us this when technically it should.
One QoL option I think worth implementing is a "Short by Best Hand" option, where you click it and the cards will be ordered into your best possible hand (and automatically highlight it for you). That way even newbies can find out A2345 is a valid straight.
That I didn't have to play 5 cards.
I did eventually realize it, but certainly on my first game I was throwing away cards I didn't need to because I thought I had to.
I wish the game more clearly showed the order of operations with the score calculations or gave a log for you to parse afterward.
I'd also like to see which hands I played previously in a round. There's a joker that adds x3 to your mult if you've already played the hand that round.
-edit- after 83 tries I finally got it. 8's full of 7's.
