I mean, why do you need a demo if you're going to buy it?
But I also don't think "because people who were playing it still want to play it" is a valid reason to keep it up. It's not an F2P game. It's not a free game. If you liked it enough that you keep wanting to play, then the demo did its job and it, theoretically, has no relevance to you any more as a demo.
I get that the very generous demo got taken down, that's fine, I will definitely be buying it. I just think it would have been better to remove the Demo alongside a release announcement or something like that.

Apparently the devs plan to release another demo this February. I'm not sure why they still insisting on not putting it on sale given that it's already a complete game, but probably advanced features are still being developed and they're still trying to patch some major bugs (Like the White Whale glitch that renders duplication Joker useless).
