Catholics get great bonuses for being in Europe, and being Christian gives access to Personal Unions. Though I'd go for Copts as Mamluks. You have many of their holy sites right off the bat.

Just find a small country and occupy it while the rebels Crusade religiously convert, they can't break your nation if you're at war.

you can only form the country as Cyprus or the knights. if you're Christian and own the provinces you can release kingdom of Jerusalem as an independent nation though

unfortunately not. both their main cultures is francien, and you can't form Jerusalem as a nation with that culture. it has to be either one of those two island nations. quite the challenge

you could always form it through console commands. but in ironman you're screwed unless you're a pretty knowledgeable player
