Dude, using exploits. Im at the start of 1600s and just started pushing into Anatolia as Byzantium, and from another exploit I'll have pretty much infinite time to play the game.
The hard part its taking France, Castille, London, the other english province and zeeland.
What you have to do if you have a good start is conquer all the muslims lands (anatolia, levante, egypt, etc) while you try to get PU with France/Castille/Austria/England. Once you get imperialism CB you have to start a no end war in Europe
You have to be very lucky to restore the Roman empire as Byzantium.
For me the lucky was that i get a PU over an Austria who had integrated Hungary adn got another PU over Napoles
Also the ideas you choose is one of the most important things
I am not sure how I would do it now....Byzantium is in a much tougher spot in 1.21.
I had Ragusa in a PU and was in the process of integrating.

go to the pause menu and click statistics, then click continue and it allows you to play past the end date and still get achievments.
