It's good to acknowledge the things about a game that you dislike, rather than outright blaming the game itself for the design. Blood Bowl is fundamentally a game about risk management, and recognising that the probability stakes/Turnover system isn't enjoyable for you helps you to identify what it is you are looking for in a game.
The fantasy of the Tolkein-esque races playing sportsball with each other is fun and compelling! I didn't know there even were games other than Blood Bowl that explored it, but if OP's been able to find it that also better suit their gameplay tastes then good for them!
